Ingredients

For about 4-5 servings honey and thyme glazed carrots:

  • 2 medium peppers (red or yellow)
  • 200g (7 oz) ricotta
  • 50g (1.8 oz) coarsely chopped walnuts
  • 40g (1.4 oz) grated parmesan
  • 1 clove garlic, finely chopped
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Thyme or parsley to garnish

Preparation

How to make honey and thyme glazed carrots:

  1. Prepare the carrots: Wash and peel the carrots, then cut them into sticks or thin rounds for quicker cooking.
  2. Sauté the carrots: In a nonstick pan, heat the extra virgin olive oil and butter over medium heat. Add the carrots and sauté for 5 minutes, stirring often.
  3. Glaze with honey: Add the honey and thyme, stirring well to distribute the seasoning evenly. Cook for another 5 minutes, until the carrots are tender and slightly caramelized.
  4. Serve and enjoy: Season with salt and pepper and serve the glazed carrots immediately, hot and glossy.

Sustainable Tips ♻️

Use organic carrots: Organic carrots are tastier and do not need to be peeled, reducing waste.

Quality honey: Choose organic or zero-mile honey to support local beekeepers and get a more authentic flavor. Find out more on La Cucina Italiana.

Lighter cooking: If you prefer a no-cook version in a pan, you can steam the carrots for 5 minutes and then season them with raw honey and thyme!
