Ingredients
For about 15 almond cookies:
- 200g (7 oz) almond flour
- 80g (2.8 oz) icing sugar
- 1 egg white
- ½ teaspoon vanilla extract (or grated lemon zest)
- 1 teaspoon honey (optional)
- 20g (0.7 oz) whole almonds for decorating
Preparation
How to make almond cookies
- Prepare the dough: In a bowl, mix the almond flour with the powdered sugar. Add the egg white and vanilla extract, mixing with a spatula until the dough is smooth. If the dough is too dry, add a teaspoon of honey to make it softer.
- Form the cookies: Take small portions of dough and form balls the size of a walnut. Place them on a baking sheet lined with baking paper and flatten them slightly with the back of a spoon. Decorate each cookie with a whole almond in the center.
- Bake: Bake the cookies in a preheated oven at 180°C for 10 minutes, until they are lightly golden on the surface. Let them cool completely before enjoying them (they will solidify as they cool).

Cocoa variant: If you love chocolate, add 10g of bitter cocoa powder to the dough for a more intense flavor.
